Carrot waldorf: the finished dish
A delicious carrot salad that doesn't ask you to grate any carrots!
Carrot Waldorf
For two to three people you will need

1 apple
1 cup baby carrots
3 tablespoons walnuts
2 tablespoons lowfat yogurt
2 tablespoons light mayonnaise
1 tablespoon honey

Quarter the apple, remove the core, then cut into chunks. Top and tail the baby carrots, and cut into chunks if necessary. Mix together the yogurt, mayonnaise and honey. Put the apple, carrots and walnuts into a serving bowl, pour the honey dressing over and mix well.
