Liven up any curry meal with these quick sambals. Serve them in little ramekin dishes.
Trio of sambals
For two to three people, you will need:
1 medium banana
1/2 cup yogurt
1 teaspoon lemon juice

1 medium tomato
1 slice onion

6 cucumber slices
1 tablespoon fresh mint

Banana sambal: Slice the banana, sprinkle with lemon juice and mix with the yogurt.
 
Tomato sambal: Cube the tomato. Chop the onion finely. Mix together.

Cucumber sambal: Cube the cucumber slices. Sprinkle with chopped fresh mint. If you haven't got fresh mint, use a couple of pinches of dried and toss well.
