
1 cup mashed potatoes
1/2 cup flour
1/2 teaspoon baking powder
1 egg
salt and pepper to taste
Heat a good nonstick pan or griddle while you mix the
ingredients.
Brush it with a little olive oil.
Add the flour, baking powder, lightly beaten egg and salt and pepper to
the mashed potato. The mixture should not be too runny, but should
spread when you spoon it into the pan.
Scoop using a 1/4 cup measure if you have one, for a nice sized
pancake. Cook over medium heat until the cake rises and starts making
firm bubble pockets around the edges. This will be about two to three
minutes at most. Turn it over and cook onto the other side for about
two minutes, until nicely browned.
