
6 cups mixed vegetables
1/2 cup water
1/4 cup feta cheese -- crumbled
3 Tablespoons olives -- halved and pitted
Chop the vegetables (if using fresh) into bite sized pieces. Brush a good non-stick wok or large pan with a little olive oil and wait while it heats. When it's hot, add the vegetables and the water. Stir fry until the water has evaporated. Sprinkle with the feta cheese and olives just before serving.
