This is a really easy way to make
macaroni cheese with the minimum of fuss and dishes. And who needs
traditional white sauce anyway?
Macaroni Cheese
For two to three people you will need:
1 1/2 cups macaroni
1 cup cheddar cheese, tightly packed into the cup
1/4 cup cheddar cheese
1 can sliced mushrooms
1/2 cup evaporated skim milk
1 tomato
1 package cheese and onion potato chips (crisps)
Heat the oven to 180C (about 350F) while you boil the water to cook the
macaroni. Place the cup of cheese and evaporated skim milk in an
ovenproof dish with a lid. Open the can of mushrooms, drain well and
add to the cheese mixture. Cover and put in the oven while the macaroni
cooks. Slice the tomato.
When the macaroni is ready, drain it well. Remove the cheese and
mushroom mix from the oven and stir well. The cheese may not be quite
melted through; don't worry about that. Add the macaroni and mix the
sauce through well. Cover the macaroni with tomato slices. Crush the
potato crisps and sprinkle over the the tomato. Lastly, sprinkle the
1/4 cup of cheese over the crisps. Put back in the oven until the
cheese has melted, about ten minutes.
