Real homemade soup without standing
over a hot stove for hours.
Hearty Chicken
Soup
For two to three people, you will need:
2 skinless boneless chicken breast halves
1 small onion
250 grams (1/2 lb) frozen mixed vegetables
1 410g/16 oz can tomatoes
1 package chicken noodle soup
1 teaspoon oil
750 milliliters (3 cups) water
Slice the chicken into strips, and then cube. The smaller the cubes,
the quicker it will cook. Peel the onion and chop coarsely. Open the
can of tomatoes but don't drain them.
Heat the oil in a good non-stick pot. Brown the onion and the chicken.
Add the water, frozen vegetables and canned tomatoes. If you are using
whole tomatoes, you can break them up in the pot. Bring to the boil.
Then add the chicken noodle soup powder, and leave to simmer for about
ten minutes more.
