You can make this with frozen,
ready-sliced beans if you don't have the time or inclination to slice
fresh. Cook them from frozen.
Green beans with
tomato
For two to three people, you will need:
2 cups sliced green beans
1/2 cup water
1 teaspoon olive oil
1 tomato
Pour boiling water over the tomato. Slice the beans. Put them into a
good non-stick pan with the half cup of water. Remove the tomato from
the boiling water and pull off the skin. Chop the tomato coarsely and
add to the beans.
Simmer in the water until the water has mostly evaporated. Add the
olive oil and sauté 2 minutes longer.
